Lapis Legit          Putu Ayu  [ coconut]         Pandan sponge cake

‘Lapis Legit’ is a reminder of Dutch colonial times. Dutch East Indies. It is a ‘spit cake’  [Lapis = Spit] – made on a rotating spit over a charcoal fire. See on Youtube here. Remarkable.

The Dutch influence leads us to ‘Rijsttafel’‘ and restaurant Bali Bali in Shaftesbury Avenue. Streetview here.

Pandan

Pandan bush.  

The leaves of the Pandan are much used in Indonesian cooking.

They give the cake its green colour.
